Why Important

• Modularizes and better distinguishes the "fundamental protocols".
• Creates better reference points.

Notes

Docs can use current material and forward useful changes (including keeping the table for the "What is a libp2p protocol" doc) from https://github.com/libp2p/docs/pull/201. Adding additional content to these docs to be tracked in other issues.
