Agreed, this should absolutely be implemented.

It's definitely not a trivial change and requires changes in a few functions. I would recommend making the functions more generic internally first and allow any day of the week...

This has been discussed in #152 shortly. Do you have any suggestions for a good UI that hides empty days but still allows to add appointments to such days easily?

Sounds like a good idea to me. To mark a to-do item as complete, you can use the "flag" key binding (defaults to `!`).
