Installer doesn't work if device has a previous EVE-OS version installed on it.

Describe the bug

Due to the usage of hard-coded UUIDs for partitions we have seen several issues related to live and installer images when device has an EVE-OS version already installed on it. Two main issues are:

1. Installer doesn't (or it might not) work if device has an EVE-OS already installed on it
2. Live image might not boot if device has EVE-OS already installed: https://github.com/lf-edge/eve/issues/3901

How to reproduce

1. Install EVE-OS on the device
2. Try to perform a new installation without wipe the disk(s)

Expected behavior

EVE should install properly

Error message

Kernel doesn't boot or it crashes
