All: Update to Confluent 6.1.x or 6.2.0

Current version in dependency is getting old, as such its causing classpath conflicts occurring when using later versions of confluent platform kafka connect.

bearing in mind that 5.5.0 only has only 6 months left approx before EOL too (April 2022), its worth upgrading to ensure users have ability to safely upgrade before EOL. https://docs.confluent.io/platform/current/installation/versions-interoperability.html#interoperability-versions

Thx @michaelandrepearce we are about to make a new release - so this won't go in this week - but we'll look into it.

on the meanwhile - do you fancy creating a PR for this ?

We have been working on an update to use Kafka 2.8.1 (Confluent 6.2.2) and Kafka 3.1.0 (Confluent 7.0.1).

This work has been merged down to master but not released yet.

Feel free to grab the branch and try it out.
