feat: make Qdrant as default vector store and bump Qdrant client to 1.8

Description

• make Qdrant as default vector store, as Qdrant is mainstream used by Dify SaaS for long
• update the used Qdrant image langgenius/qdrant in docker-compose files from 1.7.1 to 1.8.3
• bump qdrant-client to closer available version 1.8.2
