feat: native support for assistants

Implements tracing for assistant interaction as specified in https://github.com/langfuse/langfuse/issues/597

Thanks for your contribution - ~~this should be supported on main by now 👍🏾~~ This is actually only supported in the Langfuse JS SDK for now. OpenAI's beta API's are subject to frequent changes, so we only support selected cases in our SDK. If you'd like to see this supported, please open a Github feature request for us the then reopen / build upon this PR.
