Missing explanation of docker image

Currently, on docker hub, we push the latest changes to tag :latest for everybody to use. However, we are lacking some documentation on how to use this image (like environment variables, configurations files, etc..).

If someone wants to right is with different uses cases, it would be great. We will add this information into the readme of this repo and add the relevant part to docker hub.

I'm not sure it feat what you expect but I made this one : https://github.com/l3mpire/lemverse/pull/30 Also it can be great for docker deploy to merge : https://github.com/l3mpire/lemverse/pull/6 who will allow separate peer process
