defaulting of install_dir, ability to override install_dir, and dynamically set kibana binary

Thought the following would be helpful.

- default install directory to be `dirname $0`/elk to keep things self-contained
- add ability to override install location
- determine kibana binary type based off kernel (will not work for all OSs, but will catch majority)
