Feature Request: Automatically create ServiceMonitor

Is your feature request related to a problem?

Currently, the installation flow of Kubewarden with tracing and monitoring is quite complicated for the user.

As the UI offers the user to install monitoring already, including the Grafana dashboard, it would be good if the user would not have to adjust the Prometheus installation to add the ServiceMonitor manually.

Solution you'd like

In case the operator detects a Prometheus installation, it should automatically create a service monitor in the correct namespace e.g. cattle-kubewarden-system
