docs: change helm chart repo name from Testkube to Kubeshop.

Additional context

Doing this change will allow us to not use the command to deploy testkube/testkube but instead do kubeshop/testkube

The CLI gives the name kubeshop repo, so the user might end up having two repo names pointing to the same place.
