Add documentation about solr.version property

This was in the old site but doesn't seem have have made it into the new site's documentation. Add some documentation about it for people who want to run with a version of Solr/Lucene older than the default for solr-jetty-maven.

mvn -Dsolr.version=4.8.0 clean install jetty:run
