[policy] 'Supporting' K8s versions that have reached their end-of-life
Related thought: we should probably be specific about how we might handle cases like the above, where there is a supported version of knative with an EOL k8s version. We can provide what most people would understand as 'community support', but our options may be very limited in that situation if there's a problem due to a bug in the unsupported k8s version.

If we truly want to make min version a soft requirement we'll need to flush this out
@dprotaso do you have thoughts on how to best tackle this? Perhaps bring it up to needs discussion in the TOC?
I'm going to close this out - this isn't pressing and this discussion hasn't surfaced again in the last year or so
