Add safety instructions regarding z_offset configuration

First off, I find your projects amazing! I've installed several of them. Maybe this is a helpful contribution to the great work you have done.

I almost crashed my printer trying to configure the probe. These are the instructions that would have helped me so I thought I'd provide them.
