S5 fitting with Polychord for nested sampling

Luis Welbanks suggested we try Polychord as a way to speed up simultaneous fitting of multiple wavelength channels. According to him, he's used it to do nested sampling in retrievals before and it works faster than dynesty or emcee. Dropping this note so we don't forget to ask him about this!

I'm using PolyChord for my light curve fitting code outside of Eureka so I can do that!

I'm not sure if it's worth adding if we're moving towards using JAX? It depends what we want to support in the future. Discuss at Eureka! meeting?
