Guide to "nuking" Keptn v1

With the impending End of Life for Keptn v1 (22nd December 2023), we need a documentation page on how to completely remove Keptn v1 from a cluster.

I suggest it lives in the migration section

Details

Create a new documentation page on how to fully uninstall Keptn v1 from your cluster.

DoD

• page created under the migration section in docs-new
• keptn uninstallation tested out and documented on the new page
• new page includes migration or deletion of keptn v1 project git repos
• also tell users to clean up their mongoDB instance if they used a non-default one
• also mention how to remove the v1 keptn helm repo from your local helm repos
