That's unfortunately not a feature that Roll20 has. It's only possible if you have the highest tier subscription so you can set up a script that implements the blind roll...

Descoping this because the Encounter builder in DDB makes sense for Roll20 as it's better, but with Foundry, you have all the modules making its combat tracker the far superior...

I started on this but it's a much more complex issue that I'm leaving for the next release before I can tackle it.
