Remove the hard-coded Cassandra trunk SANPSHOT version

Related to #304, it would be better if the Cassandra trunk Dockerfile was not hard-coded to assume the Cassandra build artifact will be versioned as 5.0-SNAPSHOT. The Dockerfile could be altered to deduce the build artifact version.
