Vector documentation is out of date

What happened? The page https://docs.k8ssandra.io/tasks/monitor/vector/ is no longer correct for 1.6.0 and forward. This should be updated to reflect the changes done in the last release (that updated to cass-operator also) to indicate new features around logging parsing as well as how metrics are output by default.
