Update with more modern version of Jekyll and gems plus some minor fixes

I recently set up Jekyll on Windows 8.1 x64 and Windows 10 x64 using your guide which made it really easy to get started. This pull request contains some updates based on what I've tested and used plus adds a couple fixes/workarounds for problems I encountered.
