OK, just to document it, I tested this with both 8bit and quoted-printable Content-Transfer-Encoding, and both worked. I do (highly) suggest quoted-printable, but I'm very curious as to why this...

Ah OK. I guess that still leads needing to setting up the txt/automated phone call gateway, which isn't so easy to do as a free service. I'm not super excited...

OK, so opens. You're right, there's a chance it's the user's mail provider that's acting as a proxy to the opener image. I'm not sure if there's a workaround.
This should be revisited, as well as custom notification emails, as well as the option to apply the theme templates to the custom notification emails.
