Update issue templates for this repo

The current issue templates are the ones from the jupyterlab organization on GitHub:

However they don't seem to be all relevant for this repo of examples. Instead we could have other entries, such as:

  • New example idea
  • Issue with an example
  • Documentation improvements for an example
