Transition rST to MyST?

Would it be acceptable for me to to put in chore work, to transition this repo's documentation from rST to MyST as we've done in z2jh and jupyterhub for example?

I've had great experiences with the combination of MyST + Prettier + Black, it makes me quite happy to work with documentation.

• Markdown instead of rST - its a personal preference for me
• Autoformatting of YAML and Python code within Markdown files
• Autoformatting of the Markdown itself, which to my memory of my experience turns out to be mostly ensuring consistent indentation of content when having lists and such. In other words, Markdown formatting of prettier does not enforce a certain line length in z2jh for example.
