Drop the Classic Notebook extension

Problem

The Classic Notebook v6 is in maintenance mode.

Notebook 7 will be released soon: https://github.com/jupyter/notebook/issues/6307

Proposed Solution

We should consider dropping the Classic Notebook extension currently located here:
