Ability to change Timidity/Fluidsynth polyphony channel count in the config file

I couldn't find any setting like that, while chorus/reverb is fairly freely customizable in fluidsynth case.

Regrettably timidity++ seem not to have this option, but polyphony is a hardcoded number. I'll have a deeper look when I have time, but a priori i can't escape having to patch it.
