Update from 3.0.0 to 3.0.3 OpenAPI

Have a look to the changelog https://github.com/OAI/OpenAPI-Specification/releases and see what are the changes, if the library need some update or we can just change the OpenAPi version 3.0.3.

Could be useful for us to select the version? VScode is not getting good result with v3 but v3.1 is good. If fact it's only about changing the openapi field. most features are backwards compatible.
