Add CodeSandbox CI

As a hacky workaround, I had to set latest in the example package to get CodeSandbox playing nicely – which is far from ideal and unstable

Turns out I could've just used CodeSandbox CI to resolve this…

It would also be ideal for future maintenance (e.g. PRs) to set up this CI
