Standardize file names in packages/jest-snapshot

Summary

This is part of #4969, which aims to standardize all of the filenames in the project. This PR standardize file names in packages/jest-snapshot.

Test plan

Having some issues with testing on my local dev environments. Going to see how well it does in the pipeline, but it should hopefully be a simple file rename.

Anyone know what's up with the snapshot test failure? I'm having trouble running the tests locally (I'm having other failures from hg) so it's hard for me to debug at the moment.

@hedgerh You deleted e2e/snapshot-escape/__tests__/snapshot.test.js according to the diff, that's where the error comes from ;)
