Added some examples of how to test express router object

Test plan

go to examples/express folder, install libs, and run script to test,

cd examples/express
npm install
npm run test

expected output:

 PASS  __tests__/router.test.ts
  Check if all endpoints are declarated
    ✓ Should exists path /health (3 ms)
    ✓ Should exists method GET on /health

Test Suites: 1 passed, 1 total
Tests:       2 passed, 2 total
Snapshots:   0 total
Time:        4.829 s
