Add a `plt_path` option.

It is probably not uncommon in CI to need to specify an alternate path that is cached for the PLT file. But, it would still be good to derive the file name with Erlang and Elixir versions to prevent issues like in #319. If we had a plt_path option you'd have the best of both.
