How do I add more application layer profiles?

The predefined traffic profiles for Telnet, VoIP, CounterStrike, etc are very helpful. But, how can I add more traffic profiles? Supposing I have a pcap file from captured traffic that I want to emulate, is there a way I can find out its statistical properties such that I can emulate it using DITG?
