Server Metrics endpoint

Hey!

Was wondering if there's any plans of adding a Prometheus style /metrics endpoint or OpenTelemetry metrics to the rust server?

Would love to be able to see open socket connections and active rooms in combination with my regular http metrics.

And if not planned, would you be open for contributions to implement this (and have opinions on libraries etc you'd prefer or avoid?)

@Dracyr, I think Opentelemetry would be great.
