docs: fix table in generator readme

Hi,

I was browsing the docs and found something weird. Then checked the sources and found a wrong escaping.

• Aligned width of all columns
• Used same character as delimiter (\|)
• Fixed the values for adapter, adapters and esmImports

Please check the difference on the screenshots

And the table in markdown is now pretty:
