koji is not friendly to non-ASCII character support

🐛 Describe the bug

This leads to incorrect rendering, encoding errors, when non-ASCII characters (for example, Chinese, Japanese, or Korean) are used.

Hi Jade, sorry for taking this long to answer. Unfortunately, it seems that this is an issue in inquire, the library koji uses for prompting, see: https://github.com/mikaelmello/inquire/issues/23#issuecomment-2563513050 I will subscribe to the issue and keep you updated if there's any progress on the matter.

Thinking it would make sense to switch to this library?? Seems more maintained and likely doesn't have this issue
