Cleanup s3 rm db

Description

With #1264 the database from the s3-integration was removed. With this issue old resources (.i.e. databases, docs) that are no longer needed need to me removed or updated. Also the cleanup of old s3 files need to be discussed and configured accordingly via s3 lifetime.

Acceptance criteria

~~- [ ] S3 lifetime is correctly configured and working for all environments~~ (isn't configured anymore as of complete cleanup in Q1/Q2 2025)

• [ ] The old S3 databases are deleted (only where S3 uses a exclusive db)
