Is there supposed to be a temporary WiFi SSID that comes up to configure?

Or should that be configured in the code beforehand as I didn't see it defined at the top.

Apologies for the late reply. The documentation is far from ideal which I plan to update.

If your ESP8266 board is brand new or you flashed the entire contents when uploading the sketch using the Arduino IDE, on start up of the sketch, you'll see the SSID "Paradox Controller" appear. Log onto that SSID and a user interface will appear where you can set your own SSID as well as MQTT broker address and port.

I managed to upload the sketch, there is not any error, but I can not see the Paradox Controller SSID? That's why I can not set mqtt and wifi. What did I do wrong?

I solved the problem, select Generic8266 and full erase flash!
