chore: drop create-react-app (aka react-scripts)

The package itself hasn't seen any meaningful improvements over many years and it has been formally deprecated in Febuary.

It seems like a lot of #1965 tasks are dependent on this, so I think it's a great (albeit a bit late) time to consider migrating to others. I would suggest Vite as it has a strong community support, and I'd like to take a time to contribute this.

it's been considered, and something I absolutely want to do.

We will not accept any 50000 line PR though, so these changes need to be incremental, which is one reason it hasn't been done yet :(

Also, the build process and confirmation that any large build process changes work for ipfs-desktop is fairly involved.
