chore(deps): update ionicons to v8

Issue number: resolves #30445

What is the current behavior?

After the release of ionicons v8 we should update our Ionic packages to include the new version. I suggest to make this release alongside the Stencil release.

What is the new behavior?

Updated all packages to use the latest Ionicon version.

Does this introduce a breaking change?
