has color-scheme: light dark;
set, this means afaik that it adapts to my browser and/or os settings. This is fine, but unexpected because IN gives me a menu to select the color scheme. And it actually breaks the design – in my case, mainly for the logo, which is luckily an easy fix, but Thunderbird renders the text with low contrast.
Expected behavior E-Mail-Settings options should be used or the theme updated to force colors (for Thunderbird?).

I think the issue here is if the users device is dark mode, forcing light mode may not work. I'll need to circle back over this to understand the problems we saw with changing this.
I can confirm this is an issue. I have the light theme set but dark mode set in thunderbird.

If clients are using thunderbird or act similarly to thunderbird with dark mod eon, it's going to be an issue for your those clients though!
Yes, I encounter the same issue. If my clients were to be in dark mode, the design would be almost unreadable and my logo looks rubbish. I hope they are not! In light mode everything looks OK. In email settings => Email Design I selected "Light" as the option, but this is not truly honoured. Emails are still dark if the client is in dark mode.
I'm still experiencing this issue with my emails. It's making them virtually unreadable on devices with dark mode enabled :(
