Update documentation for client information surfaced in OP resources

Context

When creating any OP resource (incoming or outgoing payment), the resource created webhook event should include information about the client that created the resource. The client information is already part of the OP resource, but not stored as part of the data to be posted in the webhook. The documentation should be updated to indicate that client information will be included in the webhooks.
