Docs: Update user doc references from API (singular) to APIs (plural)

We currently have three Open Payments APIs, but the user docs don't make this distinction.

  • Resource Server API
  • Auth Server API
  • Wallet Address Server API

We need to update references to Open Payments API (singular) to Open Payments APIs (plural, no apostrophe).
