[Feature] - Complete documentation for OpenTelemetry (i.e., open-telemetry-configuration.md)

Describe the solution you'd like Once the migration from OpenCensus to OpenTelemetry has reached a state where all exporters are supported, we need to complete the documentation about the supported OC/OTEL versions (i.e., adjust the open-census-configuration.md and open-telemetry-configuration.md files and update related files accordingly (installation.md, rules.md, sidebars.json etc.)
