CPU, Memory metrics not available via metrics-server

### Describe the bug V2 introduced significant improvement in monitoring CPU and memory. But old monitoring method with metrics-server doesn't work [anymore](https://github.com/orbstack/orbstack/issues/379#issuecomment-2597057115). I see just 0 or n/a for metrics...

Now the image is hardcoded, I want able to overwrite it with own image: https://github.com/graphops/launchpad-charts/blob/main/charts/graph-node/templates/graph-node/all.yaml#L111
