Remove envoy module

This module is not doing much and is conflicting with the existing definition https://github.com/NixOS/nixpkgs/blob/nixos-22.05/nixos/modules/services/networking/envoy.nix

Also, it seems that someone forgot to commit flake.lock, so I'm dropping it here
