Add page in the Hermes guide to describe relaying on a production channel

In order to run a relayer on a production channel, it is necessary to have access to a websocket interface. I think that the nodes in the chain-registry disabled this interface.

In order to run hermes in production, it might be necessary to run a full node as well. Also, syncing with a production chain could take hours.

I asked on discord if a full node operator is willing to open WS for us.

Should we document a different default production config? Example: Osmosis, or Sentinel, or Sifchain, etc.

Nevermind, some of them enabled this interface but they used TLS.
