Within the settings for imap Mail Import, there is a option to add a specified Tag for every imported Mail. I activated this option, which works perfectly. But if I later try to set the Tag to empty, it is not possible to save this. On refresh I am back at my last selected tag. I'm on v1.10 and the integrated database.

you could try to create a new tag, assign that, and then delete the tag again while keeping the mail settings. what happens then?
