Laravel 9 support

Bumped the min php version to 8.0.2 and support illuminate/contracts ^9.0 for Laravel 9.

@alexjustesen Will also need to change the dev dependencies - I don't have a problem dropping support for Laravel 8 either btw.

@ryangjchandler sounds good, I'll update the dev deps and drop support for Laravel 8. I'll get that over to you later this morning.
