Docs: Use some released package of sphinxcontrib-video

Currently, there are no official releases from https://github.com/sphinx-contrib/video and the project seems a bit dead.

At first, it's now forked here: https://github.com/readthedocs/sphinxcontrib-video

Once that repository has a tagged release (possibly also a couple of test cases), it's possible to pin a normal dependency.
