What look and fell do you want ? You can override border radius with a theme for example.

You need to add another card for the countdown. Mushroom card only allow one entity at the time to keep it simple.

Hi 🙂 It's not possible to add icon because fields are text only but you can use emoji of course.

It's not planned to add mdi icons for now as there is emoji for that.

There is a huge refactoring in progress https://github.com/piitaya/lovelace-mushroom/pull/528. I think there is more effort to put on the documentation content instead of the documentation design/UI.
