The high gas fees will deter users from using the official bridge, hence finding alternatives. Imagine a fee of 32$ while trying to use the ZK or portal bridge when third party platforms like Orbiter offers the same service for as low as $3-5. The lower the fees, the more the users.
The high gas costs of the official bridge come from the high gas prices on L1. Trustless bridging is a complex concept, and while optimizing gas consumption is certainly a high priority for us, the cost of operation would always be dictated by the gas prices on L1.
Other projects that provide cheaper bridging options usually have different security guarantees, and it's up to users to choose the option that suits them the best.
