If I already have textmate open with a project, could gitx open files in textmate rather than xcode?

You mean, you want GitX to detect if the file is open in TextMate? Or do you want something like an "Open with >" submenu to specify an app?

open with, or set a default editor... when I right clicked on a file and chose open, it used xcode. I never use xcode...

For your case, since you don't use Xcode at all, I'd suggest using the Finder to set TextMate as the default application for whatever source file types you're working with. Of course, it's still a valid feature request in general.
